How to Choose Sausages for Quick Sausage Peppers and Onions

I usually choose an Italian sausage for Quick Sausage Peppers and Onions.  Sweet or hot, they both work well.  I’ve also just recently found a 4 cheese Italian sausage that has great flavor and works well in Quick Sausage Peppers and Onions.  I’ve used all kinds of bratwurst sausages too, from a bacon cheddar to a Hawaiian, the latter of which I basted with just a bit of teriyaki sauce.  There are so many wonderful combinations out there.

Ingredients

  • 2 lbs sausage, any flavor
  • 4 peppers, any color, sliced
  • 2 onions, sliced
  • 5-6 cloves garlic

Instructions

  1. Place the peppers, onions, and garlic in a large saute pan. Put the sausages on top.
  2. Cover and heat over medium heat.
  3. Cook until the sausages are cooked through, about 20 minutes, stirring occasionally to keep the onions and peppers from sticking.
  4. Serve on rolls, if desired.

Changing the Flavor of Quick Sausage Peppers and Onions

One of my favorite flavors to add to the mix is Mexican.  I mix the peppers up with some poblano, chipotle, and jalapenos, giving the dish a bit of a kick, but not so much that you can’t eat it because of how hot it is.  Chorizo becomes the sausage of choice in this.  If you’ve never had chorizo, it is spicy and savory, having a blend of herbs and spices that is beyond amazing.  The combination changes Quick Sausage Peppers and Onions radically, so you can have Italian one night and Mexican the next, and your family will love them both.
