Every time I go out to eat, the same thing is on the menu for appetizers.  Spinach Artichoke Dip.  Sometimes it has a cutsie name like Spin Dip or something, but it’s always the same.  Slimy spinach, bland creamy dip, and iffy dippers.  Occasionally I find a Spinach Artichoke Dip that’s actually pretty tasty, but I find I’d rather make it at home with fresh spinach, cream cheese, and the fantastic flavor of parmesan cheese.  Plus, I can toss it in my favorite 2 quart slow cooker and have a dip that withstands the rigors of the big game or a holiday buffet.  Trust me.  Your family and guests will love the fresh, rich flavor of Spinach Artichoke Dip.

Ingredients You Know and Trust in Spinach Artichoke Dip

I love the ingredients in Spinach Artichoke Dip.  I know what they are, I can buy natural versions, and combined, they really blend to make something phenomenal.  I start out with cream cheese, sour cream, and mayonnaise, for a smooth, creamy base to the dip.  Fresh spinach, finely chopped, as well as artichokes, either from a can or from the freezer section add body and flavor, while the parmesan cheese adds a salty, familiar flavor that wraps everything up.  A pinch of red pepper flakes and you are all set to be the Spinach Artichoke Dip hero.

Easy Slow Cooker Spinach Artichoke Dip

Ingredients

  • 1 8 oz pkg cream cheese, softened
  • ¼ C mayonnaise
  • ¼ C sour cream
  • ½ C grated parmesan cheese
  • ¼ t red pepper flakes
  • 1 t garlic, minced
  • 2 C chopped fresh spinach
  • 2 cans artichoke hearts, drained and chopped
  • Dippers (bread, tortilla chips, pretzels, celery)

Instructions

  1. In a bowl, mix the cream cheese, mayonnaise, sour cream, parmesan, red pepper, and garlic until well mixed.
  2. Add the spinach and artichoke hearts, mixing well.
  3. Pour the mixture into a 2 quart slow cooker and set to low.
  4. When dip is hot and bubbly, approximately 1 hour, serve with dippers.

Dippers for your Spinach Artichoke Dip

Really anything will work as dippers for Spinach Artichoke Dip.  Corn chips, tortilla chips, bread, and even crackers work well with Spinach Artichoke Dip.  I love pretzels with it, as well as rice crackers.  When I serve Spinach Artichoke Dip, I always have a bowl of celery sticks as well.  I love the crunchy contrast to the creamy dip.  Never have a tasteless dip again when you make Spinach Artichoke Dip from scratch at home.
