Turkey…very useful meat, I know….well, I hear that we have some GREAT cooks that read my blog (ok, I didn’t hear it, I am assuming)…so I want to know, how are you planning to use your Thanksgiving leftovers?
I will start, a friend of mine makes Turkey sandwiches…doesn’t sound appealing until you hear that he puts turkey, stuffing/dressing, cranberry sauce and gravy all on the sandwich. So it really is like Thanksgiving in a bun.
I use the turkey meat in place of chicken in my recipes. I debone the rest of my turkey, divide into 1 pound portions and freeze. Then anytime the recipe calls for a pound of cooked chicken, I use my turkey. Turkey noodle soup is one of my favorites. I use my own chicken noodle soup recipe and substitute turkey.

I take my leftover corn, green bean casserole, mashed potatoes and turkey and mix it all togther with a can of cream of chicken & 1 cream of mushroom soup to make turkey pit pie. For the topping I mix up some bisquick with water or milk and spread across the top and bake. Super easy and yummy!
That was pot pie…not pit pie! LOL!!
